How to make Gujarati magas

To make Gujarati Magaz, first put a little ghee in a plate or tray and grease it. Then put desi ghee in a pan and keep the ghee to melt. Keep the flame medium to low, when the ghee melts, add gram flour to it and mix the gram flour in the ghee well.

After that, while stirring the gram flour continuously, fry it till the color of gram flour changes. As soon as your gram flour starts roasting, the aroma will start coming from your gram flour. Then slow down the flame.

When your besan starts turning light golden in color. Then fry the gram flour for 5 to 6 minutes while stirring it. (You have to roast the gram flour while stirring continuously. Otherwise your gram flour will start sticking to the bottom of the pan. It will take 12 to 15 minutes to roast the gram flour.)

After that turn off the gas and keep mixing one tablespoon of milk in the gram flour, adding milk will make your sweet grainy. As soon as you pour milk in the gram flour, bubbles will start coming in the gram flour. This will make your gram flour grainy.

Now put the pan on the gas and cook on medium flame while stirring for a minute. After a minute turn off the gas and keep the pan off the gas and stir the gram flour continuously for one to two minutes.

After that leave the gram flour to cool for 10 minutes and keep stirring in between. So that the gram flour does not stick to the bottom of the pan. After 10 minutes, add powdered sugar and small cardamom powder to the gram flour and mix both very well.

Then spread the mixture on a greased plate or tray. Then put pistachios , almonds and chilonji on it and keep the mixture to set.

When your mixture cools down a bit, then with a knife cut small or large pieces into any shape of your choice. Do not remove the pieces of barfi, but keep it to set better.

Then take out each piece with a knife and take it out in a plate. Your grainy Gujarati magaz is ready.
